Earth week is in full-swing, and Oregon is lush and green as can be. What better way to celebrate the season than to imbibe green as well? We have organic saké at the ready!
Organic alcohol is made with ingredients only grown on organic farms. The farm is free of pesticides, fertilizers, and chemicals normally found in its conventional counterparts. Certified by the U.S. Department of Agriculture, organic alcohol must use production methods and handling procedures without residues that can potentially pollute the air, soil, and water. At our Kura (brewery) in Oregon, everything from the ingredients, brewing process, aging process, and bottling process are all USDA and Oregon Tilth certified organic.
Saké is made of only water, rice, Koji spore (aspergillus oryzae) and yeast, and as such, contains no naturally occurring or added sulfites. This applies to all our saké offerings. Though every ingredient must be certified, the biggest difference between regular saké and organic saké is the rice. We brew our Organic Junmai and Nigori with special organic rice out of Sacramento Valley, California. The amount of protein in this rice tends to be a little less than standard rice, which is a pretty big deal when it comes to the taste and nose. If you try Momokawa Organic Junmai next to Momokawa Ruby, the difference is immense.

The first Organic saké to carry the USDA seal, Momokawa Organic Junmai Ginjo is the everyday choice of those seeking maximum flavor and organic sensibilities. This Junmai offers lush layers of bright, honeyed fruit flavors, suspended in a rich and buttery mouthfeel. Its perfect balance of flavors and texture make it a great transition for wine drinkers who want to try something a little different.
Momokawa Organic Nigori is a coarsely filtered ode to traditional saké, and also blazed the trail as the very first USDA certified organic Nigori produced in the US. Silky layers of flavors like custard, almond and coconut are partnered with the rich and decadent body that make Nigori styles so loveable. Smooth, round and fruity. What more could you want in a Nigori?
Hakutsuru Organic Saké is both USDA and QAI (Quality Assurance International) certified organic. Using only premium Californian grown rice, Hakutsuru created a masterfully brewed sake that is sharp, dry and light-bodied. This Junmai has hints of caramel, grains, and banana on the nose, and a smooth and round flavor profile. You will find consistent layers of rice tones from beginning to end.
It takes more work to brew a USDA Certified saké, but the results are well worth it. Enjoy and Kanpai!
